As Regional Vice President and General Manager at Four Seasons Hotel Tokyo at Otemachi, he is also responsible for Four Seasons properties in Beijing, Kyoto, and Marunouchi.

Fumio is the former Executive Chef and Producer of Sustainable Grill restaurant, The Burn. He began his culinary career in Tokyo’s pioneer Italian restaurant, II Boccalone. His drive to gain global perspectives and experience led him to travel solo to New York in 2002 when he was just 22.

 


Later, he became the first Japanese sous chef at 3-star Michelin Jean-Georges and served as the Chef de Cuisine of Jean-Georges Tokyo until the opening of The Burn. He published the book, Vegan Recipe, in 2019.
